How it's done

Chocolate

Our cacao is ethically sourced from small scale farmers in Venezuela. We use the most prized variety of cacao “Criollo”. Criollo beans account for less than 0.01% of all cacao produced, making them the rarest of all the varieties. The chocolate is renowned for its complex flavour and minimal bitterness that is due to its low tannin content. Present in Criollo Chocolate are the natural notes of raisin, cherry, espresso and orange blossom capturing the essence of Venezuela’s unique cacao terrain.

Matcha

We use Matcha sourced directly from Uji, Kyoto. Uji is renowned globally to be the birthplace of the finest green tea in Japan. Revered for its vibrant color and rich umami this matcha brings unmatched authenticity and complexity to our handcrafted creations.

Fruits

When the seasons come around, you’ll find us out in the orchards, picking fruit at its peak ripeness- when the flavour is at its absolute best. And when we can’t pick it ourselves, we turn to trusted farms across the nation, who care about the quality of produce as much as we do.
